Ingredients
For the Ice Cream Base:
2 cups heavy cream
1 cup whole milk
¾ cup granulated sugar
1 tsp vanilla extract
2 tbsp peanut butter (optional, for a richer peanut butter flavor)
For the Cookie Dough:
½ cup (115g) unsalted butter, softened
½ cup (100g) brown sugar
¼ cup (50g) granulated sugar
1 tsp vanilla extract
1 cup (125g) all-purpose flour (heat-treated*)
½ tsp salt
½ cup mini chocolate chips
For the Mix-Ins:
2 Snickers bars, chopped into small pieces
2 Reese’s peanut butter cups, chopped into small pieces
¼ cup mini chocolate chips (optional, for extra texture)
Instructions
1. Prepare the Ice Cream Base:
Combine heavy cream, whole milk, granulated sugar, and vanilla extract in a mixing bowl. Whisk until the sugar is completely dissolved.
If desired, melt the peanut butter until smooth and mix it into the cream mixture.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (about 20-25 minutes). Transfer to a large bowl and set aside.
2. Make the Cookie Dough:
Cream the softened butter with brown sugar and granulated sugar until fluffy.
Mix in the vanilla extract.
Gradually add the heat-treated flour and salt until a dough forms.
Fold in the mini chocolate chips and roll the dough into small, bite-sized pieces. Set aside.
3. Combine the Ice Cream:
Gently fold the Snickers pieces, Reese’s peanut butter cup chunks, cookie dough bites, and extra chocolate chips (if using) into the churned ice cream. Stir until evenly mixed.
4. Freeze the Ice Cream:
Transfer the mixture to an airtight container, smoothing the surface with a spatula.
Cover with plastic wrap or wax paper, pressing it directly onto the ice cream surface to prevent ice crystals.
Freeze for at least 4-6 hours, or overnight, until firm.
5. Serve and Enjoy:

Notes
Heat-Treating Flour: Spread the flour on a baking sheet and bake at 350°F (175°C) for 5 minutes to eliminate bacteria. Let it cool before using.
No Ice Cream Maker? You can freeze the base in a container, stirring every 30 minutes for 4-6 hours. While it won’t be as smooth, it will still be delicious!
