Ingredients:
4 boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup cornstarch
2 large eggs
1/4 cup vegetable oil
1/2 cup sugar
1/4 cup ketchup
1/2 cup apple cider vinegar
2 tbsp soy sauce
1 tsp garlic powder
1/2 tsp sea salt
Instructions:
1. Preheat the oven to 325°F (163°C) and prepare a 13×9-inch baking dish by lining it with parchment paper or lightly greasing it.
2. Season the chicken pieces with salt and pepper.
3. Place the cornstarch in a large resealable bag, add the chicken pieces, seal, and shake to coat evenly.
4. In a shallow bowl, beat the eggs.
5. Heat the vegetable oil in a skillet over medium-high heat until hot.
6. Dip each cornstarch-coated chicken piece into the beaten eggs, ensuring full coverage.
7. Sear the chicken in the hot skillet until golden brown on all sides (no need to cook fully through).
8. Transfer the seared chicken to the prepared baking dish.
For the Sauce:
1. In a bowl, mix sugar, ketchup, apple cider vinegar, soy sauce, and garlic powder until well combined.
2. Pour the sauce evenly over the chicken in the baking dish.
Baking:
1. Bake the chicken uncovered for 45–50 minutes, stirring every 15 minutes to coat the chicken in the sauce.
2. Once done, the chicken should be tender, and the sauce should have thickened.
Serve hot over steamed rice or alongside your favorite vegetables. Enjoy!
