Ingredients
For the Meatloaf:
1 ½ pounds (680g) ground beef (80/20 blend)
1 cup breadcrumbs
1 large egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
½ teaspoon smoked paprika
Salt and black pepper, to taste
For the Caramelized Onion Gravy:
2 large onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
2 cups beef broth
1 tablespoon all-purpose flour
1 tablespoon Worcestershire sauce
Salt and black pepper, to taste
Instructions
Make the Meatloaf:
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic, ketchup, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix gently until well combined.
3. Shape the mixture into a loaf shape and place it on the prepared baking sheet.
4. Bake for 50–60 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for 5–10 minutes before slicing.
Prepare the Caramelized Onion Gravy:
1. Heat butter and olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20–25 minutes).
2. Sprinkle the flour over the onions and stir well to combine. Cook for another minute.
3. Gradually pour in the beef broth, stirring constantly to avoid lumps.
4. Add Worcestershire sauce, salt, and pepper. Simmer for 5–7 minutes until the gravy thickens.
To Serve:
Slice the meatloaf and drizzle it with the caramelized oniongravy. Pair it with mashed potatoes or roasted vegetables for a hearty meal. Enjoy!
