Ingredients:
Peach Pudding Base:
- 5 cups diced peaches (peeled, fresh or frozen)
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup whole milk
- 4 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp sea salt
Luscious Topping:
- 3 tbsp unsalted butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 3 cups water
- 1/2 tsp cinnamon
Instructions:
- Preheat your oven to 400°F and lightly grease a 9×13-inch baking dish.
- In a mixing bowl, combine the diced peaches, flour, sugar, milk, baking powder, salt, cinnamon, and vanilla extract. Stir until well incorporated.
- For the topping, melt the butter in a saucepan. Add the brown sugar, granulated sugar, and water, then bring to a gentle boil until the sugar dissolves completely.
- Pour the peach mixture into the prepared baking dish.
- Carefully pour the topping mixture over the peaches without stirring.
- Bake for about 50 minutes, or until the top is golden brown and bubbling.
