Sweet Potato Pie Recipe

 

Ingredients:

2 cups sweet potatoes, cooked and mashed (about 3 medium-sized sweet potatoes)

1 1/2 cups sugar

2 tablespoons all-purpose flour

1/2 cup butter, softened

1/2 cup evaporated milk

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 unbaked 9-inch pie crust


Instructions:

1. Prepare Sweet Potatoes:

Boil, bake, or steam the sweet potatoes until tender. Allow them to cool, then peel and mash until smooth.

2. Preheat Oven:

Preheat your oven to 350°F (175°C).

3. Mix Filling:

In a large mixing bowl, combine the mashed sweet potatoes, sugar, and flour. Mix well. Add the softened butter, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk or beat until smooth and creamy.

4. Assemble the Pie:

Pour the sweet potato mixture into the unbaked pie crust. Smooth the top with a spatula.

5. Bake:

Place the pie on the middle rack of the oven. Bake for 55-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.

6. Cool and Serve:

Remove the pie from the oven and allow it to cool completely before slicing. Serve as is or with a dollop of whipped cream on top.
