Slow Cooker Creamy Tortellini Soup

Ingredients:

  • 1 lb Italian sausage, browned and drained
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 (28-ounce) can diced tomatoes
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 2 cups fresh spinach, roughly chopped
  • Grated Parmesan cheese, for garnish

Instructions:

  1. In a slow cooker, combine the cooked Italian sausage, sliced onion, minced garlic, and diced tomatoes.
  2. Pour in the vegetable broth and season with dried basil, dried oregano, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the chopped spinach and cheese tortellini to the slow cooker.
  5. Stir in the heavy cream and mix well.
  6. Cover again and cook on high for another 25-30 minutes, until the tortellini is soft and tender.
  7. Serve hot, garnished with grated Parmesan cheese.
