Ingredients:
- 1 lb Italian sausage, browned and drained
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 (28-ounce) can diced tomatoes
- 1 (9-ounce) package refrigerated cheese tortellini
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup heavy cream
- 2 cups fresh spinach, roughly chopped
- Grated Parmesan cheese, for garnish
Instructions:
- In a slow cooker, combine the cooked Italian sausage, sliced onion, minced garlic, and diced tomatoes.
- Pour in the vegetable broth and season with dried basil, dried oregano, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, add the chopped spinach and cheese tortellini to the slow cooker.
- Stir in the heavy cream and mix well.
- Cover again and cook on high for another 25-30 minutes, until the tortellini is soft and tender.
- Serve hot, garnished with grated Parmesan cheese.
