Ingredients:
4 slices of stale bread
2 eggs
200 ml milk
Salt and pepper to taste
4 tablespoons pesto
2 tomatoes
200 g mozzarella
2 tablespoons olive oil
Fresh basil leaves for garnish
Instructions:
1. In a bowl, whisk together the eggs, milk, salt, and pepper.
2. Dip each slice of bread into the egg and milk mixture, ensuring they are fully soaked.
3. Heat olive oil in a skillet over medium heat and cook the soaked bread slices until golden on both sides.
4. Spread one tablespoon of pesto onto each golden slice of French toast.
5. Slice the tomatoes and mozzarella into even rounds.
6. Place the tomato and mozzarella slices on top of the prepared toast.
7. Transfer the slices to the oven and broil for 5 minutes, or until the mozzarella is melted and lightly golden.
8. Garnish with fresh basil leaves before serving.
