Instructions


1. Prepare the Dough

In a large mixing bowl, combine the flour, salt, and yeast. Stir well to ensure even distribution.

Add the minced garlic and chopped rosemary to the dry ingredients. Stir to incorporate.

Pour the warm water into the bowl and mix with a wooden spoon or spatula until a shaggy dough forms. The dough will look sticky, but this is normal.

2. Let the Dough Rest

Cover the bowl with plastic wrap or a clean kitchen towel. Allow it to rest at room temperature for 12-18 hours. This long fermentation time develops the flavor and texture.

3. Shape the Dough

After resting, the dough will have risen and appear bubbly. Lightly flour a clean surface, and gently turn the dough onto it. Be careful not to deflate it too much.

With floured hands, shape the dough into a round loaf. Place it on a piece of parchment paper for easy handling.

4. Preheat the Oven

About 30 minutes before baking, place a Dutch oven (or any oven-safe pot with a lid) inside your oven and preheat it to 450°F (230°C).
