Ingredients:
6 hard-boiled eggs, peeled
1 pound of your preferred sausage (e.g., kielbasa or smoked sausage), sliced
1 onion, thinly sliced
1 cup white vinegar
1 cup water
1/4 cup sugar
1 tablespoon salt
1 teaspoon black peppercorns
1 teaspoon mustard seeds
1 teaspoon red pepper flakes (optional)
Instructions:
Prepare the Pickling Brine:
1. Combine the white vinegar, water, sugar, salt, black peppercorns, mustard seeds, and optional red pepper flakes in a medium-sized saucepan.
2. Bring the mixture to a boil, then lower the heat and let it simmer for about 5 minutes to blend the flavors.
Assemble the Jar:
1. In a clean glass jar or lidded container, layer the peeled hard-boiled eggs, sliced sausage, and thinly sliced onion.
2. Pour the hot pickling brine over the contents, ensuring everything is fully submerged in the liquid.
3. Let the jar cool to room temperature before sealing it.
Storage:
Refrigerate the jar for at least 24 hours to allow the flavors to develop. For the best taste, let it sit for a few days before serving.
