One-Pan Garlic Herb Chicken with Potatoes & Green Beans

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste

For the Potatoes:

  • 1 lb baby potatoes, cut in half
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper to taste

For the Green Beans:

  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: Fresh parsley for garnish

Instructions:

  1. Preheat the Oven:
    • Set your oven to 400°F (200°C).
  2. Season the Chicken:
    • In a bowl, mix olive oil, garlic powder, dried oregano, salt, and pepper.
    • Coat the chicken breasts evenly with the seasoning mixture.
  3. Prepare the Potatoes:
    • Toss the halved potatoes with olive oil, garlic powder, salt, and pepper in a separate bowl.
  4. Assemble the Dish:
    • Arrange the chicken in the center of a large sheet pan or baking dish.
    • Place the seasoned potatoes around the chicken.
  5. Initial Baking:
    • Bake for about 20 minutes.
  6. Add the Green Beans:
    • Remove the pan from the oven and add the green beans tossed with olive oil, salt, and pepper.
  7. Final Baking:
    • Return to the oven and bake for another 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  8. Serve and Enjoy:
    • Let the dish rest for a few minutes, garnish with fresh parsley if desired, and serve warm.
