Homemade Angel Biscuits

Ingredients:

½ cup hot water (100–110°F)

1 (¼ oz) packet active dry yeast

1 teaspoon sugar

5½ cups White Lily flour (or any all-purpose flour)

¼ cup granulated sugar

¾ teaspoon salt

½ cup cold butter, cubed

½ cup cold shortening, cubed

2 cups buttermilk

¼ cup melted butter (for brushing)


Preparation:

1. Activate the Yeast:
In a small bowl, combine the hot water, yeast, and 1 teaspoon of sugar. Stir gently and let it sit for 5 minutes, allowing the yeast to activate and become foamy.

2. Prepare the Dry Ingredients:
In a large mixing bowl, whisk together the flour, ¼ cup sugar, and salt until well combined.

3. Cut in Butter and Shortening:
Using a pastry blender or two forks, cut the cold butter and shortening into the flour mixture. Continue until the mixture resembles coarse crumbs.

4. Combine Wet and Dry Ingredients:
Add the activated yeast mixture and buttermilk to the flour mixture. Stir gently until the dough is just combined and moist. Be careful not to overmix.

5. Chill the Dough:
Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours or up to 5 days. This chilling process enhances the flavor and makes the dough easier to handle.

6. Prepare for Baking:
Preheat your oven to 400°F (200°C). Lightly grease a 10–12 inch cast iron skillet or line a baking sheet with parchment paper.

7. Shape the Biscuits:
Turn the chilled dough onto a floured surface and knead it 3–4 times. If the dough feels too sticky, sprinkle with a little extra flour as you knead. Roll the dough out to a ¾-inch thickness.

8. Fold and Roll:
Fold the dough in half, then roll it out again to ¾-inch thickness. This creates layers that result in flaky biscuits.

9. Cut the Biscuits:
Use a 2½ or 3-inch round biscuit cutter to cut out the biscuits. Place them in the prepared skillet or on the baking sheet so their sides are touching.

10. Bake the Biscuits:
Brush the tops with half of the melted butter. Bake in the preheated oven for 15–20 minutes, or until golden brown on top.

11. Serve Warm:
Once out of the oven, brush the biscuits with the remaining melted butter. Serve warm and enjoy with your favorite spreads or as a side to any meal.
