Ingredients:
Oatmeal: 100g (1 cup)
Carrots: 2 medium-sized, grated
Apples: 2 medium-sized, grated
Water: 70ml (¼ cup)
Sweetener (Stevia): Adjust to your taste
Dried Apricots: 40g (⅓ cup), chopped
Raisins: 100g (½ cup)
Eggs: 2 large
Baking Powder: 10g
Vanilla Extract: 1 tsp
Olive Oil: For greasing the mold
Almonds: 20g (chopped)
Walnuts: 20g (chopped)
White Chocolate (sugar-free): 30g, melted
Instructions:
1. Prepare the Ingredients:
Grate the carrots and apples.
Chop the dried apricots, almonds, and walnuts.
2. Mix the Dry Ingredients:
Combine oatmeal, baking powder, and sweetener in a bowl.
3. Combine Wet Ingredients:
In a separate bowl, whisk the eggs and mix in grated apples, carrots, water, and vanilla extract.
4. Add Mix-ins:
Gradually add the dry mixture to the wet ingredients. Stir in the raisins, dried apricots, almonds, and walnuts.
5. Bake the Cake:
Grease the mold with olive oil and pour the batter into it.
Bake at 180°C (350°F) for about 30–40 minutes or until a toothpick comes out clean.
6. Decorate:
Once cooled, drizzle the sugar-free white chocolate over the cake for added sweetness.
