Ingredients:
- 8 Tbsp. unsalted butter
- ½ cup granulated sugar
- 1 cup yellow cornmeal
- 2 large eggs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
Instructions:
1. Preheat the oven to 375°F (190°C). Grease an 8×8-inch baking dish or cast-iron skillet.
2. Melt the butter in a skillet or saucepan over low heat, then remove from heat. Stir in the sugar until well combined.
3. Add the eggs to the butter-sugar mixture and beat until smooth.
4. In a separate bowl, whisk together the cornmeal, flour, baking soda, and salt.
5. Alternate adding the dry ingredients and buttermilk into the butter mixture, stirring until fully combined.
6. Pour the batter into the greased baking dish and smooth the top.
7. Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
8. Let it cool slightly, then serve warm with butter or honey.
