Crispy Golden Ham & Cheese Breakfast Muffins

 

Ingredients:

  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 3 eggs, beaten
  • 1/4 cup milk
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 2 tablespoons melted butter
  • 1/4 cup chopped green onions (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin cups.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
  3. Prepare Wet Ingredients: In another bowl, beat the eggs, then add the milk and melted butter. Mix well.
  4. Combine Everything: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the diced ham, shredded cheddar cheese, and green onions.
  5. Fill Muffin Cups: Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake: Bake for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool & Serve: Let the muffins cool for a few minutes before removing them from the tin. Serve warm and enjoy!
