Cheesy Mashed Potato Puffs

These crispy, golden potato puffs are packed with cheesy goodness and make the perfect snack, appetizer, or side dish! They’re a great way to transform leftover mashed potatoes into a delicious treat.

Ingredients:

  • 2 cups mashed potatoes (fresh or leftover)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 2 green onions, finely chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C) and grease a muffin tin or line it with cupcake liners.
  2. Prepare the Mixture: In a large bowl, mix the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, and green onions. Season with salt and pepper, then stir until well combined.
  3. Fill the Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each section about ¾ of the way full.
  4. Bake: Place in the oven and bake for 20-25 minutes, or until the tops turn golden brown and slightly crispy.
