Cajun Cabbage Jambalaya

 

Ingredients:

  • 1 lb ground beef, sausage, or a combination
  • 1 medium onion, diced
  • 1 bell pepper (green or red), diced
  • 3 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup cooked white rice
  • 1 cup chicken broth or water
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional for extra spice)
  • 2 tablespoons olive oil or butter

Instructions:

  1. Cook the Meat:
    Heat olive oil in a large skillet or pot over medium-high heat.
    Add the ground beef or sausage and cook until browned, breaking it apart with a spatula.
    Drain any excess grease if necessary.
  2. Sauté the Vegetables:
    Add diced onion and bell pepper to the skillet and sauté for 3–4 minutes until softened.
    Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Cook the Cabbage and Seasonings:
    Add the chopped cabbage and mix well.
    Sprinkle in Cajun seasoning, smoked paprika, thyme, salt, black pepper, and cayenne pepper (if using).
    Stir occasionally and cook for about 5 minutes until the cabbage starts to soften.
  4. Simmer:
    Pour in the diced tomatoes (with their juices) and chicken broth.
    Stir everything together and bring to a gentle simmer.
    Cover and let cook for 15–20 minutes, stirring occasionally, until the cabbage is tender.
  5. Add the Rice:
    Stir in the cooked white rice and mix well to combine.
    Let it cook for another 5 minutes, allowing the flavors to blend.
  6. Serve and Enjoy:
    Taste and adjust seasoning if needed.
    Serve hot, garnished with fresh parsley or green onions if desired.
