CABBAGE ROLL SOUP

Cabbage Roll Soup takes all the delicious flavors of traditional cabbage rolls and transforms them into a simple, hearty soup. This easy-to-make dish offers the same comforting taste without the time-consuming process of rolling individual cabbage leaves.

The soup starts with a flavorful tomato-based broth, perfectly seasoned with a blend of herbs and spices. Tender chunks of cabbage provide a slightly sweet and earthy taste, blending beautifully with the rich broth.

Ground beef, browned to perfection, adds a hearty depth of flavor, making the soup both filling and satisfying. Rice is included to soak up the broth, creating a wonderfully thick and textured consistency.

Ingredients:

  • 4 cups beef broth
  • 8 oz tomato sauce
  • ½ cup uncooked long-grain rice
  • 1 bay leaf
  • 3 tsp brown sugar
  • 2 tsp parsley
  • 2 tsp olive oil
  • Salt & pepper to taste
  • 1 lb ground beef
  • 1 diced onion
  • 2 tsp minced garlic
  • 4 cups chopped green cabbage
  • 2 sliced carrots

Instructions:

Step 1:
In a large pot, heat olive oil over medium heat. Add the ground beef, season with salt and pepper, and cook for about 6 minutes, breaking it apart with a spatula until browned. Stir in the garlic and onion, cooking for another 4 minutes until fragrant.

Step 2:
Add the carrots, cabbage, beef broth, rice, tomato sauce, bay leaf, brown sugar, and additional salt and pepper. Stir well, bring the mixture to a boil, then reduce the heat and let it simmer for about 26 minutes, or until the rice is tender.

Step 3:
Remove the bay leaf, garnish with fresh parsley, and serve hot. Enjoy!
