Blueberry Cottage Cheese Breakfast Bake

 

Ingredients:

 

  • 1 cup cottage cheese
  • ½ cup rolled oats
  • ½ cup fresh blueberries
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions:

 

1. Preheat & Prepare:

Preheat your oven to 350°F (175°C). Grease a small baking dish to prevent sticking.

2. Mix Wet Ingredients:

In a mixing bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), cinnamon, vanilla extract, and salt until well combined.

3. Add Dry Ingredients:

Stir in the rolled oats, then gently fold in the fresh blueberries to avoid breaking them.

4. Bake:

Pour the mixture into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes, or until golden brown and set in the center.
