Barbara Dean Walker Banana Bread with Caramel Glaze

 

This banana bread is incredibly moist, packed with sweet banana flavor, and finished with a luscious caramel glaze. It’s perfect for breakfast, a snack, or a delicious dessert!

Ingredients

For the Banana Bread:

  • 3 ripe bananas, mashed 🍌
  • 2 cups all-purpose flour 🥣
  • 1/2 cup unsalted butter, melted 🧈
  • 3/4 cup sugar 🍚
  • 2 eggs 🥚🥚
  • 1 teaspoon vanilla extract 🌿
  • 1 teaspoon baking soda 🥄
  • 1/2 teaspoon salt 🧂
  • 1/2 teaspoon cinnamon (optional) 🌰

For the Caramel Glaze:

  • 1/2 cup brown sugar 🍂
  • 1/4 cup heavy cream 🥛
  • 2 tablespoons butter 🧈
  • 1/2 teaspoon vanilla extract 🌿
  • A pinch of salt 🧂

Instructions 👨‍🍳

1️⃣ Preheat your oven to 350°F (175°C) and grease a loaf pan.

2️⃣ In a mixing bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Stir well.

3️⃣ In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

4️⃣ Gradually add the dry ingredients to the wet mixture, stirring gently until just combined—avoid overmixing.

5️⃣ Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool before glazing.

6️⃣ To make the caramel glaze, heat brown sugar, heavy cream, butter, and salt in a saucepan over medium heat. Stir continuously until the mixture is smooth and slightly thickened. Remove from heat and stir in the vanilla extract.

7️⃣ Drizzle the warm caramel glaze over the cooled banana bread. Slice and enjoy! 😋
