No-Bake Lemon Truffles

 

These delightful lemon truffles make perfect gifts or treats for any occasion. Best of all? No baking required!

Ingredients:

  • 2 tbsp freshly squeezed lemon juice
  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • Zest of 2 lemons
  • 2 cups powdered sugar
  • Optional: A few drops of yellow food coloring

Instructions:

  1. Heat the Cream: In a small saucepan, bring the heavy cream to a gentle simmer.
  2. Melt the Chocolate & Butter: Pour the hot cream over the white chocolate chips and butter. Stir until everything melts and becomes smooth.
  3. Add Lemon Flavor: Mix in the lemon zest and lemon juice, ensuring even distribution.
  4. Incorporate Sugar: Gradually add the powdered sugar, stirring until the mixture is well combined and silky. If using food coloring, mix it in at this stage.
  5. Chill the Mixture: Transfer the mixture to the refrigerator and let it set for about 2 hours or until firm enough to shape.
  6. Form the Truffles: Using a spoon or melon baller, scoop out small portions and roll them into bite-sized balls. Coat each truffle in powdered sugar for an extra sweet touch.
  7. Final Chill: Arrange the truffles on a tray and refrigerate for at least 30 minutes to help them set properly.

Serving Suggestions:
