Ingredients
Slow Cooker Whole Cauliflower
Servings: 4-6
Prep Time: 10 mins
Cook Time: 5 hrs
Total Time: 5 hrs, 10 mins
1 large whole cauliflower
4 cloves garlic, minced
4 tablespoons melted butter
1 tablespoon finely chopped sage
1 lemon, juiced and zested
1½ teaspoons salt
½ teaspoon pepper
¾ cup powdered Parmesan cheese
2 tablespoons finely chopped fresh parsley
Preparation
Prepare the Cauliflower: If your cauliflower comes with greens, keep them intact. Place the whole cauliflower into your slow cooker.
Create the Butter Mixture: In a small mixing bowl, combine the garlic, melted butter, chopped sage, and lemon zest. Pour and rub this mixture over the entire cauliflower, ensuring even coverage.
Add Seasoning: Sprinkle salt and pepper evenly over the buttered cauliflower, followed by a thorough covering of powdered Parmesan cheese.
Add Lemon Juice: Instead of pouring the lemon juice directly onto the cauliflower, disperse it around the sides within the slow cooker.
Cooking: Allow the cauliflower to cook on a low setting for 5 hours, or alternatively, on a high setting for 3 hours and 30 minutes.
Remove and Add Parsley: After cooking, carefully extract the cauliflower from the slow cooker and add parsley, mixing it with the liquid remaining from the cooking process.
Serve: Slice the cauliflower and generously pour over the parsley-infused cooking liquid as a sauce.
Enjoy: This dish pairs beautifully with grilled chicken or fish, but can equally stand alone as a hearty vegetarian option.
Pro Tip: Those green cauliflower leaves? Absolutely edible! Including them not only prevents unnecessary waste but also adds a delectable, leafy component to your dish.
