Pancake Sausage Casserole


The perfect breakfast bake with layers of fluffy pancake batter and savory sausage!

Ingredients:

  • 2 cups pancake mix
  • 1 ¼ cups milk
  • 1 egg
  • ½ tsp vanilla extract
  • 1 lb breakfast sausage, cooked and crumbled
  • ½ cup shredded cheddar cheese (optional)
  • 2 tbsp maple syrup (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare Batter: In a large bowl, whisk together the pancake mix, milk, egg, and vanilla extract until smooth.
  3. Layer Ingredients: Pour half of the pancake batter into the prepared baking dish. Sprinkle the cooked sausage evenly over the batter. If using, add shredded cheese for extra flavor.
  4. Add Remaining Batter: Pour the remaining pancake batter over the sausage and spread it evenly.
  5. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Serve: Let the casserole cool slightly before slicing. Drizzle with maple syrup if desired and serve warm.
