This hearty soup takes its cues from traditional lasagna ingredients and adds a thick, creamy Alfredo sauce for a satisfying twist!
The following ingredients are needed for the recipe: 1 tablespoon of olive oil, 1 diced small onion, 3 minced garlic cloves, 1 pound of Italian sausage (mild or hot), 5 cups of chicken or vegetable broth, 1 can of crushed tomatoes, 8 ounces of lasagna noodles, broken into pieces, 1 cup of heavy cream, 1 cup of grated Parmesan cheese, and 1 and a half cups of shredded mozzarella cheese.
For seasoning, add salt and pepper according to personal preference.
Garnish with fresh parsley or basil
Preparation
Saute the garlic and onion: Olive oil should be heated in a big saucepan over medium heat. After a few minutes, add the chopped onion and continue cooking until it becomes soft. After one more minute, stir in the minced garlic.
Sausage Cooking: Brown the Italian sausage in a skillet over medium heat, breaking it up occasionally.
Pour in the broth and crushed tomatoes, and mix to combine. Reduce heat to low and simmer soup.
Prepare the Noodles: Toss in the shattered lasagna noodles and bring to a boil. About 10 to 12 minutes into cooking, or until the noodles reach an al dente texture.
Turn heat down to low and stir in cream and cheese. Melt and blend the mozzarella, Parmesan, and heavy cream. Add seasonings according to your liking.
To serve, spoon the soup into individual bowls and top with chopped fresh parsley or basil, if preferred. Have a warm one!
