Black People’s Pound Cake

 

Ingredients:

  • 1 ½ cups unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups granulated sugar
  • 6 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp lemon extract (optional)
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt

Instructions:

  1. Preheat the oven to 325°F (163°C). Grease and flour a bundt pan or tube pan.
  2. In a large bowl, cream together the butter and cream cheese until smooth and fluffy.
  3. Gradually add the sugar, beating well after each addition, until the mixture is light and airy.
  4. Add eggs one at a time, beating after each addition to fully incorporate.
  5. Mix in the vanilla extract and lemon extract (if using).
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let the cake cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.

Optional Glaze (for extra sweetness):

Mix 1 cup powdered sugar with 2 tbsp milk and ½ tsp vanilla extract. Drizzle over the cooled cake.
