- 1 ½ cups unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups granulated sugar
- 6 large eggs
- 1 tbsp vanilla extract
- 1 tsp lemon extract (optional)
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
Instructions:
- Preheat the oven to 325°F (163°C). Grease and flour a bundt pan or tube pan.
- In a large bowl, cream together the butter and cream cheese until smooth and fluffy.
- Gradually add the sugar, beating well after each addition, until the mixture is light and airy.
- Add eggs one at a time, beating after each addition to fully incorporate.
- Mix in the vanilla extract and lemon extract (if using).
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
Optional Glaze (for extra sweetness):
Mix 1 cup powdered sugar with 2 tbsp milk and ½ tsp vanilla extract. Drizzle over the cooled cake.
