Ingredients:
- 4 tortillas (8 inch)
- 1 cup shredded mozzarella
- 1 cup shredded cheddar
- 3 cups roughly chopped spinach
- 8 ounces sliced mushrooms
- Olive oil (optional, enough to lightly coat the tortillas)
Instructions:
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Sauté the mushrooms in a dry pan over medium heat until they release their moisture and become golden brown. Add the chopped spinach and stir until wilted. Remove from heat.
3. Assemble the quesadillas: Place two tortillas on the prepared baking sheet. Sprinkle half of the mozzarella and cheddar cheese evenly over them. Distribute the spinach and mushroom mixture on top, then add the remaining cheese. Cover with the remaining two tortillas.
4. Lightly brush the tops of the quesadillas with olive oil for a crispy texture.
5. Bake for 10-12 minutes, or until the tortillas turn golden brown and crispy.
6. Slice and serve immediately with your favorite dipping sauce, such as sour cream, salsa, or guacamole.
