Banana Cinnamon Rolls Recipe

 

Ingredients

For the Dough

  • 4 cups all-purpose flour
  • ⅓ cup packed light brown sugar
  • 2¼ teaspoons Rapid Rise yeast
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 cup milk
  • 6 tablespoons unsalted butter
  • ⅔ cup mashed overripe banana

For the Cinnamon Sugar Filling

  • ¼ cup unsalted butter, softened
  • ½ cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • A pinch of salt

For the Cinnamon Cream Cheese Frosting

  • ⅓ cup unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine 2 cups of flour, brown sugar, yeast, cinnamon, and salt.
  2. Heat the milk and butter in the microwave for about 30 seconds until the butter is nearly melted and the mixture is warm (not hot). Add this to the dry ingredients along with the mashed banana.
  3. Using a mixer, beat on low speed, then increase to high for about 2 minutes. Scrape down the sides of the bowl and add 1 more cup of flour. Gradually incorporate the remaining flour until a soft dough forms and pulls away from the bowl.
  4. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and allow it to rise in a warm area for approximately 1 hour or until it doubles in size.
  6. In a small bowl, mix the brown sugar, cinnamon, and salt for the filling.
  7. Roll the dough into an 18×12-inch rectangle. Spread the softened butter over the entire surface, then sprinkle the cinnamon-sugar mixture evenly, gently pressing it into the dough.
  8. Roll the dough tightly from the long edge and pinch the seam to seal. Use a sharp knife or dental floss to slice it into 12 even rolls.
  9. Arrange the rolls in a parchment-lined 9×13-inch baking dish, cover, and let them rise for another hour until they become puffy.
  10. Preheat the oven to 350°F (175°C) and bake for 30 minutes, or until golden brown and fully cooked through. Allow them to cool slightly before frosting.
  11. For the frosting, beat the butter, cream cheese, powdered sugar, cinnamon, milk, vanilla, and salt in a stand mixer until smooth and fluffy.
  12. Spread the frosting generously over the warm rolls before serving.
