Stuffed Mashed Potato Nests – Simple and Delicious Recipe

 

Ingredients:

  • 3–5 large potatoes
  • 3.5 tbsp (50 g) butter
  • A bunch of fresh dill
  • A little salt, smoked paprika, black pepper, oregano
  • 1.1 lbs (500 g) ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 large tomato, diced
  • 2.5 oz (70 g) tomato paste
  • A bunch of fresh parsley, chopped
  • 3.5 oz (100 g) mozzarella cheese, shredded

Instructions:

  1. Prepare the Mashed Potatoes:
    • Peel and boil the potatoes in salted water until soft.
    • Drain and mash them well.
    • Add the butter, chopped dill, salt, black pepper, smoked paprika, and oregano. Mix until smooth and creamy. Set aside to cool slightly.
  2. Cook the Beef Filling:
    • In a large pan, sauté the chopped onion in a bit of oil until soft.
    • Add the minced garlic and stir for about 30 seconds.
    • Add the ground beef and cook until browned.
    • Add the diced red bell pepper and tomato. Cook for 5–7 minutes until softened.
    • Stir in the tomato paste, salt, pepper, oregano, and fresh parsley. Let it simmer for another 5 minutes, then remove from heat.
  3. Shape the Potato Nests:
    • Preheat your oven to 375°F (190°C).
    • On a lined baking tray, take a portion of the mashed potato and shape it into a nest (a round base with a small well in the center).
    • Repeat until all the mashed potato is used.
  4. Fill and Bake:
    • Spoon the beef mixture into each mashed potato nest.
    • Top each with shredded mozzarella cheese.
    • Bake in the preheated oven for about 15–20 minutes, or until the cheese is melted and golden.
  5. Serve:
    • Garnish with extra fresh parsley or dill if desired.
    • Serve warm as a main dish or hearty side.
