Ingredients:
- 3–5 large potatoes
- 3.5 tbsp (50 g) butter
- A bunch of fresh dill
- A little salt, smoked paprika, black pepper, oregano
- 1.1 lbs (500 g) ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 large tomato, diced
- 2.5 oz (70 g) tomato paste
- A bunch of fresh parsley, chopped
- 3.5 oz (100 g) mozzarella cheese, shredded
Instructions:
- Prepare the Mashed Potatoes:
- Peel and boil the potatoes in salted water until soft.
- Drain and mash them well.
- Add the butter, chopped dill, salt, black pepper, smoked paprika, and oregano. Mix until smooth and creamy. Set aside to cool slightly.
- Cook the Beef Filling:
- In a large pan, sauté the chopped onion in a bit of oil until soft.
- Add the minced garlic and stir for about 30 seconds.
- Add the ground beef and cook until browned.
- Add the diced red bell pepper and tomato. Cook for 5–7 minutes until softened.
- Stir in the tomato paste, salt, pepper, oregano, and fresh parsley. Let it simmer for another 5 minutes, then remove from heat.
- Shape the Potato Nests:
- Preheat your oven to 375°F (190°C).
- On a lined baking tray, take a portion of the mashed potato and shape it into a nest (a round base with a small well in the center).
- Repeat until all the mashed potato is used.
- Fill and Bake:
- Spoon the beef mixture into each mashed potato nest.
- Top each with shredded mozzarella cheese.
- Bake in the preheated oven for about 15–20 minutes, or until the cheese is melted and golden.
- Serve:
- Garnish with extra fresh parsley or dill if desired.
- Serve warm as a main dish or hearty side.
