Ingredients
For the Dough:
- 1 cup warm milk
- 2¼ tsp active dry yeast (1 packet)
- ½ cup granulated sugar
- ⅓ cup unsalted butter, melted
- 1 tsp salt
- 2 ripe bananas, mashed
- 2 eggs
- 4½–5 cups all-purpose flour
For the Filling:
- ¾ cup brown sugar, packed
- 2 tbsp ground cinnamon
- ⅓ cup unsalted butter, softened
For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- ½ tsp vanilla extract
- 1–2 tbsp milk (as needed for consistency)
Instructions
- Prepare the Dough:
- In a large bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy.
- Stir in sugar, melted butter, salt, mashed bananas, and eggs. Mix well.
- Add flour gradually, mixing until a soft dough forms. Knead for 5–7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Make the Filling:
- In a small bowl, mix brown sugar and cinnamon.
- Roll the dough out on a floured surface into a large rectangle (about 16×12 inches).
- Spread the softened butter over the dough, then sprinkle evenly with the cinnamon-sugar mixture.
- Roll and Slice:
- Starting from the long edge, roll the dough into a tight log.
- Slice into 12 equal rolls and place in a greased 9×13-inch baking dish.
- Cover and let rise for another 30–45 minutes.
- Bake:
- Preheat the oven to 350°F (175°C).
- Bake rolls for 25–30 minutes or until golden brown.
- Make the Icing:
- Beat together cream cheese and butter until smooth.
- Add powdered sugar and vanilla, then mix in milk a little at a time until desired consistency is reached.
- Frost and Serve:
- Spread icing over warm cinnamon rolls.
- Serve immediately and enjoy!
