Tomato Soup with Cheesy Onion Toast

Ingredients

For the Tomato Soup

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

3 cups vegetable broth

1 tbsp tomato paste

1 tsp sugar (optional, to balance acidity)

½ tsp dried basil (or 1 tbsp fresh)

½ tsp dried thyme (optional)

½ cup heavy cream or milk (optional)

Salt and pepper, to taste

For the Cheesy Onion Toast

2 small onions, thinly sliced

4 slices crusty bread

1 cup shredded cheddar cheese

Optional Garnish

Fresh parsley or chives, chopped


 

Instructions

Making the Tomato Soup

1. Sauté the Aromatics

In a large pot, heat the olive oil over medium heat.

Add the diced onion and sauté for about 5 minutes until softened and translucent.

Stir in the minced garlic and cook for another minute until fragrant.

2. Build the Flavor

Add the crushed tomatoes, vegetable broth, tomato paste, basil, and thyme (if using).
