Ingredients

– 1 cup finely chopped fresh broccoli florets
– 8 large eggs
– 1/4 cup heavy cream
– 1/2 cup shredded cheddar cheese
– 1/4 cup diced red bell pepper (optional for a pop of color)
– Salt and pepper to taste
– Non-stick cooking spray or muffin liners

Preparation

  1. Preheat your oven to 350°F (175°C). Then lightly spray a 12-cup muffin tin with non-stick cooking spray or line with muffin liners for easy cleanup.
  2. Steam the chopped broccoli until it’s tender but still has a bit of bite, about 3 to 4 minutes. Set aside to cool slightly.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until the mixture is well combined.
  4. Stir in the shredded cheddar cheese and, if you’re using it, add in the diced red bell pepper. Mix in the steamed broccoli.
  5. Scoop the egg mixture evenly into the prepared muffin tin. Each cup should be about 2/3 full.
  6. Bake in the preheated oven for 15 to 20 minutes, or until the egg bites are set and lightly golden on top.
  7. Let them cool for a couple of minutes before removing them from the muffin tin. Serve warm.
