Preparation
- Preheat your oven to 350°F (175°C). Then lightly spray a 12-cup muffin tin with non-stick cooking spray or line with muffin liners for easy cleanup.
- Steam the chopped broccoli until it’s tender but still has a bit of bite, about 3 to 4 minutes. Set aside to cool slightly.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until the mixture is well combined.
- Stir in the shredded cheddar cheese and, if you’re using it, add in the diced red bell pepper. Mix in the steamed broccoli.
- Scoop the egg mixture evenly into the prepared muffin tin. Each cup should be about 2/3 full.
- Bake in the preheated oven for 15 to 20 minutes, or until the egg bites are set and lightly golden on top.
- Let them cool for a couple of minutes before removing them from the muffin tin. Serve warm.
