Taco Rice with Queso

 

Ingredients:

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 cup salsa
  • 1 ½ cups long-grain white rice
  • 3 ½ cups water or chicken broth
  • Salt and pepper, to taste
  • 1 cup cheese dip (any variety)
  • Sliced green onions (optional, for garnish)

Instructions:

 

1. In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked. Drain any excess grease.

2. Sprinkle the taco seasoning over the beef and stir well to coat evenly.

3. Add the salsa and rice, mixing everything together thoroughly.

4. Pour in the water or chicken broth, stir, and bring the mixture to a boil.

5. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20–25 minutes, or until the rice is tender and the liquid has been absorbed.

6. Remove from heat and fluff the rice with a fork.

7. Warm the cheese dip in a microwave-safe bowl for about 60 seconds, stirring until smooth.

8. Drizzle the queso over the taco rice and garnish with sliced green onions, if desired.

9. Serve immediately and enjoy!

Extra Cheesy Option: Heat additional cheese dip and pour extra over the taco rice for an even cheesier dish!
