Slow Cooker Meatloaf Recipe

Ingredients:

  • 1.5 lbs ground beef, or a mix of beef and pork
  • ½ cup shredded Parmesan cheese
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup tomato sauce (optional, for topping)

Instructions:

  1. In a large mixing bowl, combine the ground meat, Parmesan cheese, breadcrumbs, and milk.
  2. Add the chopped onion, minced garlic, beaten egg, parsley, oregano, basil, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Shape the mixture into a loaf and place it in the slow cooker.
  4. If desired, spread tomato sauce over the top for extra flavor.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the internal temperature reaches 160°F.
  6. Carefully remove the meatloaf from the slow cooker and let it rest for a few minutes before slicing.
  7. Serve warm, garnished with fresh parsley if desired.
