Pickled Red Onions with Lime and Spices

 

Ingredients:

1 large red onion, thinly sliced

1/2 cup fresh lime juice (about 4 limes)

1/2 cup white vinegar

1 tablespoon sugar

1 teaspoon salt

1/2 teaspoon black peppercorns

1/2 teaspoon cumin seeds

1/2 teaspoon coriander seeds

2 bay leaves

1-2 dried chili peppers (optional, for heat)

1/2 cup boiling water

 


Instructions:

 

Step 1: Prep the Onion

Slice the red onion into thin rounds and place them in a heatproof bowl or jar.

 

Step 2: Blanch the Onion

Pour the boiling water over the onion slices. Let them sit for 1 minute, then drain and return the onions to the jar.

 

Step 3: Prepare the Pickling Brine

In a small saucepan, mix lime juice, white vinegar, sugar, salt, black peppercorns, cumin seeds, coriander seeds, bay leaves, and dried chili peppers (if desired).

Warm the mixture over medium heat, stirring until the sugar and salt dissolve. Avoid bringing it to a boil.

 

Step 4: Combine and Cool

Pour the warm brine over the onions, ensuring they are completely submerged. Let the mixture cool to room temperature, then seal the jar and refrigerate.

Step 5: Marinate

Allow the onions to marinate for at least 1 hour, but for the best flavor, refrigerate overnight.
