Old-Fashioned Chocolate Pie with Golden Meringue

 

Ingredients

 

For the Pie Filling:

1 baked pie crust

1/4 cup unsalted butter

1 cup granulated sugar

1/4 cup all-purpose flour

1/2 cup cocoa powder

2 cups milk

3 egg yolks

1 teaspoon vanilla extract

For the Meringue:

3 egg whites

1/4 teaspoon cream of tartar

1/2 cup granulated sugar


 

Instructions

1. Prepare the Pie Crust:

Bake the pie crust according to the package directions or your preferred recipe. Allow it to cool completely before adding the filling.

2. Make the Chocolate Filling:

In a medium saucepan, combine the cocoa powder, sugar, and flour. Gradually whisk in the milk until smooth.

Add the egg yolks and butter to the mixture.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens into a creamy, pudding-like consistency.

Remove from heat and stir in the vanilla extract.

Pour the warm chocolate filling into the prepared pie crust.

3. Prepare the Meringue:

In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.

Gradually add the sugar, one tablespoon at a time, while continuing to beat the mixture on high speed until stiff, glossy peaks form.

4. Assemble and Bake:

Spread the meringue evenly over the chocolate filling, ensuring it reaches the edges of the crust to seal.

Use a spatula to create decorative peaks or swirls in the meringue.

Bake the pie in a preheated oven at 350°F (175°C) for 10-15 minutes, or until the meringue is lightly golden brown.

5. Cool and Serve:

Allow the pie to cool completely on a wire rack before slicing and serving.
