Oatmeal, Apple & Carrot Loaf (No Sugar, No Flour)

Ingredients:

  • 2 cups (200 g) rolled oats, chopped in a blender
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk of your choice (e.g., almond, oat, cow’s milk)
  • 1 medium carrot, grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tablespoons raisins, rinsed with hot water
  • 1 apple, grated

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Prepare a loaf pan by greasing it or lining it with parchment paper.
  3. In a large mixing bowl, combine the chopped oats and baking powder.
  4. Add the grated carrot, grated apple, chopped apricots, and raisins.
  5. Pour in the milk and mix everything well until fully combined.
  6. Let the mixture sit for about 10–15 minutes to allow the oats to absorb some moisture.
  7. Pour the mixture into the prepared loaf pan and smooth the top.
  8. Bake for about 45–55 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  9. Let it cool completely before slicing.
