Ingredients:
- 2 cups (200 g) rolled oats, chopped in a blender
- 1 teaspoon baking powder
- 1 cup (240 ml) milk of your choice (e.g., almond, oat, cow’s milk)
- 1 medium carrot, grated
- 9 dried apricots, rinsed with hot water and chopped
- 4 tablespoons raisins, rinsed with hot water
- 1 apple, grated
Instructions:
- Preheat your oven to 180°C (350°F).
- Prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the chopped oats and baking powder.
- Add the grated carrot, grated apple, chopped apricots, and raisins.
- Pour in the milk and mix everything well until fully combined.
- Let the mixture sit for about 10–15 minutes to allow the oats to absorb some moisture.
- Pour the mixture into the prepared loaf pan and smooth the top.
- Bake for about 45–55 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let it cool completely before slicing.
