Ingredients:
- 2 cups mashed potatoes (use leftovers or freshly prepared)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons chopped chives (optional)
- Salt and pepper, to taste
- 1/4 cup breadcrumbs (optional, for a crispy top)
Instructions:
- Preheat your oven to 400°F (200°C). Grease a muffin tin lightly or line with paper cupcake liners.
- In a mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan, egg, and chives. Season with salt and pepper. Mix everything together until smooth and well blended.
- Scoop the potato mixture into the prepared muffin tin, filling each cup about three-quarters full. If you’d like an extra crunch, sprinkle breadcrumbs over the top.
- Bake for 20 to 25 minutes, or until the tops are golden brown and slightly puffed.
- Allow to cool for a few minutes before removing from the tin. Serve warm as a tasty snack or a comforting side dish.
