Mashed Potato Cheese Puffs Recipe

 

Ingredients:

  • 2 cups mashed potatoes (use leftovers or freshly prepared)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons chopped chives (optional)
  • Salt and pepper, to taste
  • 1/4 cup breadcrumbs (optional, for a crispy top)

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin lightly or line with paper cupcake liners.
  2. In a mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan, egg, and chives. Season with salt and pepper. Mix everything together until smooth and well blended.
  3. Scoop the potato mixture into the prepared muffin tin, filling each cup about three-quarters full. If you’d like an extra crunch, sprinkle breadcrumbs over the top.
  4. Bake for 20 to 25 minutes, or until the tops are golden brown and slightly puffed.
  5. Allow to cool for a few minutes before removing from the tin. Serve warm as a tasty snack or a comforting side dish.
