Lasagna Roll Ups Recipe – Delicious lasagna rolls made with Italian sausage ricotta cheese and spinach rolled up and topped with meat sauce mozzarella and parmesan cheese. You are going to love this mouthwatering twist on the classic lasagna!

Lasagna Rolls are the perfect easy kid friendly dinner recipe! Not only are they super easy to make but they are melt in your mouth delicious. This recipe makes 12 rolls feeding about 6 people and makes for amazing leftovers!

If you are cooking for a larger crowd you can easy double the recipe. If you are cooking for a smaller crowd simply cut the recipe in half and use an 8×8 baking dish.

Store completely cooled leftover lasagna rolls in an airtight container in the fridge for up to 2-3 days. You can also freeze lasagna in an airtight freezer bag for up to a month.

INGREDIENTS YOU NEED TO MAKE LASAGNA ROLLS:

Lasagna Sheets – I used barilla lasagna. You’ll need 12 sheets.

Italian Sausage – One pound ground Italian sausage or you can also use ground beef or ground turkey.

Mozzarella Cheese – Two cups shredded mozzarella cheese.

Ricotta Cheese – One 15 oz. tub ricotta cheese. Or you can use full fat cottage cheese instead.

Parmesan Cheese – Fresh grated parmesan cheese.

Yellow Onion – You can also use red or white onion.

Garlic Cloves – Fresh garlic is best in this recipe.

Spinach – Fresh chopped spinach.

Tomato Sauce – Two 15 oz. cans of tomato sauce or you can use a large 24 oz. jar of your favorite pasta sauce.

Egg – For the ricotta mixture.

Basil – You can use dried or fresh basil.

Parsley – You can use dried of fresh parsley.

Oregano – Dried or fresh oregano both work great.

HOW TO MAKE THE BEST EASY LASAGNA ROLL UPS:

Boil lasagna sheets according to package instructions for al dente. Drain and separate lasagna sheets. Set aside for later.

In a large skillet over medium heat add chopped onion and sausage. Cook stirring occasionally until sausage is cooked through and onions are tender. Add minced garlic seasonings and tomato sauce. Stir to combine and let simmer over low heat for about 10-15 minutes. *Remove from heat when done and let cool slightly.

Preheat oven to 350 degrees.

In a small bowl mix together ricotta cheese egg 1/4 cup parmesan cheese 1 cup mozzarella cheese and chopped spinach.

Spread about 1/4 cup of the meat sauce to cover the bottom of your baking dish.

Make the lasagna roll ups by laying out each sheet of lasagna and spreading about 2 tablespoons of the ricotta mixture onto each sheet. Top the ricotta mixture with about 2 tablespoons of meat sauce. Roll lasagna up and place in dish. Repeat with 12 rolls.

Pour remaining meat sauce on top of the rolls and sprinkle with remaining mozzarella and parmesan cheeses.

Cover dish with foil and bake for 40 minutes. Carefully remove foil and let cook another 5 minutes.

Remove Lasagna Roll Ups from oven and let cool for a few minutes before serving. Enjoy!!

LASAGNA STORAGE AND MAKE AHEAD INSTRUCTIONS:

You can make these 2-3 days ahead of time by storing completely cooled leftover lasagna rolls in an airtight container in the fridge for up to 2-3 days. To reheat lasagna from the fridge: Cover with foil and place in your preheated 350 degree oven for about 25 minutes.

Microwave reheat from the fridge: Place in the microwave lightly covered to prevent splatter for about 1 minute.

You can also freeze lasagna in an airtight freezer bag for up to a month. To reheat frozen lasagna: place in an oven safe baking dish covered with foil. Place lasagna in 350 degree preheated oven for 40 minutes.
