Juicy Korean-Style BBQ Meatballs with Spicy Mayo Sauce


Ingredients

For the Meatballs:

  • 1 lb (450g) ground beef
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 green onions, finely chopped
  • 1/2 tsp black pepper
  • 1 tsp gochujang (Korean chili paste) — optional for extra heat

For the Spicy Mayo Sauce:

  • 1/2 cup mayonnaise
  • 1-2 tbsp sriracha (adjust to taste)
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp honey (optional for a touch of sweetness)

For Garnish:

  • Toasted sesame seeds
  • Sliced green onions

Instructions

  1. Prepare the Meatballs:
    • In a large bowl, combine the ground beef, soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, egg, breadcrumbs, green onions, black pepper, and gochujang (if using).
    • Mix everything well using your hands or a spatula until evenly combined.
    • Form the mixture into small meatballs, about 1-1.5 inches in size.
  2. Cook the Meatballs:
    • Heat a bit of oil in a large skillet over medium-high heat.
    • Add the meatballs in batches, making sure not to overcrowd the pan.
    • Cook for about 7-8 minutes, turning occasionally, until nicely browned and cooked through.
    • Alternatively, you can bake them at 400°F (200°C) for about 15-18 minutes.
  3. Make the Spicy Mayo Sauce:
    • In a small bowl, whisk together the mayonnaise, sriracha, sesame oil, rice vinegar, and honey until smooth.
    • Taste and adjust the spiciness or sweetness as desired.
  4. Assemble and Serve:
    • Place the hot meatballs on a serving plate.
    • Drizzle or dip with the spicy mayo sauce.
    • Garnish with toasted sesame seeds and sliced green onions.

Serving Suggestion:
Serve these juicy meatballs with steamed rice, kimchi, or tucked into lettuce wraps for a fun and fresh bite.
