Ingredients:

  • 1 large zucchini (about 300g / 10.5 oz), grated
  • 4 tablespoons (40g) rolled oats
  • 100g (3.5 oz) shredded mozzarella cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil (or 2 tablespoons fresh)
  • Salt, to taste
  • Black pepper, to taste

Instructions:

1. Preheat the oven:

  • Set your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.

2. Prepare the zucchini:

  • Grate the zucchini and transfer it to a clean kitchen towel or cheesecloth.
  • Squeeze out as much excess moisture as possible to help the crust hold together better.

3. Make the crust mixture:

  • In a bowl, combine the grated zucchini, rolled oats, shredded mozzarella, eggs, garlic, basil, salt, and black pepper.
