Healthy Oat Pancake Recipe

Ingredients:

2 cups oatmeal (220g)

½ teaspoon salt (3g)

4 large eggs

1 cup warm milk (250ml)

3 ½ tablespoons butter, melted (50g)

1 tablespoon vanilla extract (or vanillin)

1 cup water (250ml)


Instructions:

1. Prepare the oatmeal base:
Begin by blending the oatmeal in a food processor or blender to create a fine oat flour. This will ensure smooth and fluffy pancakes.

2. Mix the wet ingredients:
In a large mixing bowl, whisk the eggs, warm milk, melted butter, vanilla extract, and water together until well combined.

3. Combine dry and wet ingredients:
Gradually add the oat flour and salt to the wet mixture. Stir gently to avoid lumps, ensuring the batter has a smooth and slightly thick consistency.

4. Rest the batter:
Allow the batter to rest for 2-3 minutes. This gives the oats time to absorb the liquid, making the pancakes fluffier.

5. Heat your skillet:
Place a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of butter or oil.

6. Cook the pancakes:
Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until golden brown.

7. Serve and enjoy:
Stack the pancakes on a plate and serve warm. You can top them with fresh fruit, unsweetened yogurt, or a drizzle of honey for added flavor (optional).
