Hawaiian Banana Bread

 

Ingredients:

1/2 cup butter, softened

2 large eggs

1 very ripe banana, mashed

8 ounces crushed pineapple (do not drain)

1 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup shredded coconut

Optional: 1/2 cup chopped nuts (e.g., macadamia or walnuts)


Instructions:

1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

2. Mix Wet Ingredients: In a large bowl, cream together the softened butter and sugar until smooth and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the mashed banana, crushed pineapple (with its juice), and vanilla extract.

3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Avoid overmixing to keep the bread tender.

4. Add Coconut and Nuts: Fold in the shredded coconut and, if desired, the chopped nuts.

5. Transfer to Pan: Pour the batter into the prepared loaf pan, spreading it evenly.

6. Bake: Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
