Grandma’s Famous Sweet Potato Butter Cake

A rich, moist, and perfectly spiced dessert, Grandma’s Famous Sweet Potato Butter Cake combines tender sweet potatoes with warm cinnamon and nutmeg, all wrapped in a buttery, melt-in-your-mouth crumb that’s been passed down through generations.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 cup cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup whole milk (or buttermilk for extra richness)
  • 2 tsp vanilla extract

Optional (for glaze or topping):

  • ¼ cup melted butter
  • ½ cup powdered sugar
  • 1-2 tbsp milk
  • ½ tsp vanilla extract

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or a 9-inch round cake pan.
  2. Prepare Sweet Potatoes:
    Peel and boil sweet potatoes until soft, then mash until smooth. Let them cool slightly.
  3. Mix Dry Ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. Cream Butter and Sugar:
    In a large bowl, beat the softened butter with the sugar until light and fluffy (about 3-4 minutes).
  5. Add Eggs:
    Add eggs one at a time, beating well after each addition.
  6. Add Sweet Potatoes and Vanilla:
    Mix in the mashed sweet potatoes and vanilla extract until combined.
  7. Combine Wet and Dry Ingredients:
    Alternately add the flour mixture and milk to the butter mixture, starting and ending with flour. Mix just until incorporated—do not overmix.
  8. Bake:
    Pour batter into the prepared pan. Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool:
    Let the cake cool in the pan for 10-15 minutes, then turn it out onto a wire rack to cool completely.
  10. Optional Glaze:
    Mix melted butter, powdered sugar, milk, and vanilla to make a glaze. Drizzle over cooled cake if desired.
