German Potato Pancakes (Kartoffelpuffer)

 

Ingredients:

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup vegetable oil (for frying)
  • Applesauce or sour cream (for serving)

Instructions:

  1. Prepare the Potatoes and Onion:
    Grate the peeled potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Grate the onion and mix it together with the potatoes.
  2. Make the Batter:
    In a mixing bowl, combine the grated potatoes and onion with eggs, flour, salt, pepper, and nutmeg (if using). Stir everything together until well blended.
  3. Heat the Oil:
    Pour the vegetable oil into a large skillet and heat it over medium heat until hot.
  4. Cook the Pancakes:
    Scoop about 2 tablespoons of the mixture into the hot oil for each pancake. Flatten gently with the back of a spoon. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.
  5. Drain and Serve:
    Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve warm with applesauce or sour cream on the side.
