Garlic Parmesan Pork
Ingredients
For the Pork Chops:
4 pork chops (bone-in or boneless)
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme (optional)
Salt and pepper to taste
For the Cheesy Scalloped Potatoes:
4 large potatoes, thinly sliced
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon nutmeg (optional)
Salt and pepper to taste
Instructions
Pork Chops:
1. Preheat your oven to 375°F (190°C).
2. Season the pork chops with garlic powder, paprika, thyme, salt, and pepper.
3. Heat olive oil in a skillet over medium-high heat. Sear the pork chops on both sides until golden brown (about 3-4 minutes per side).
4. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
5. Sprinkle Parmesan cheese over the pork chops. Transfer the skillet to the oven and bake for 15-20 minutes until the pork chops reach an internal temperature of 145°F (63°C).
Cheesy Scalloped Potatoes:
1. Preheat your oven to 375°F (190°C). Grease a baking dish.
2. In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
3. Gradually whisk in the milk, stirring constantly, until the mixture thickens.
4. Add cheddar cheese, Parmesan cheese, garlic powder, nutmeg, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
5. Layer the potato slices in the prepared baking dish. Pour the cheese sauce over the potatoes, ensuring all slices are coated.
6. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 20-25 minutes until the potatoes are tender and golden on top.
Serve:
Place the pork chops on a plate and serve with a generous portion of cheesy scalloped potatoes. Garnish with fresh parsley, if desired.
