Garlic Mushrooms Cauliflower Skillet

Ingredients:

  • 1 head of cauliflower, chopped into florets
  • 1 lb (450g) mushrooms, sliced
  • 4-5 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon butter (optional)
  • Salt and pepper to taste
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley, chopped for garnish
  • Lemon wedges for serving (optional)

Instructions:

  1. Prepare the cauliflower: Cut the cauliflower into small florets. You can steam or blanch the florets for about 2-3 minutes until they are tender but still firm. Drain and set aside.
  2. Cook the mushrooms: In a large skillet, heat olive oil and butter (if using) over medium heat. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 6-8 minutes. Stir occasionally to ensure even cooking.
  3. Add garlic: Once the mushrooms are golden and tender, add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Combine with cauliflower: Add the cauliflower florets to the skillet. Stir everything together, making sure the mushrooms and cauliflower are evenly combined. Season with salt, pepper, and thyme (if using).
  5. Sauté everything together: Let the mixture cook for another 5-7 minutes, stirring occasionally, to allow the flavors to meld and the cauliflower to crisp up slightly on the edges.
  6. Garnish and serve: Remove from heat and sprinkle fresh parsley on top. Serve with lemon wedges for a burst of freshness, if desired.
