Fresh out of the oven, these babies smelled irresistible. We couldn’t wait and devoured them before dinner!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • 1 cup cold butter, cut into small cubes
  • 1 egg, lightly beaten
  • 1 cup grated cheddar or pepper jack cheese
  • 2 tablespoons finely minced jalapeños
  • 1 teaspoon fresh thyme leaves

Instructions

  1. In a large mixing bowl, combine the flour, salt, and rosemary.
  2. Add the cold, cubed butter and mix until the dough becomes crumbly.
  3. Stir in the beaten egg, shredded cheese, jalapeños, and thyme leaves.
  4. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 1 hour.
  5. Preheat the oven to 400°F (200°C).
  6. Roll the dough into small 1-inch balls and place them on a greased or parchment-lined baking sheet, leaving space between them.
  7. Flatten each ball slightly with the bottom of a glass or jar.
  8. Bake for about 15 minutes, or until golden brown.
  9. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Prefer a milder taste? Reduce the jalapeños or swap them for finely diced bell peppers.
  • If you have picky eaters, try using mozzarella or another mild cheese.
  • Experiment with different herbs like basil or oregano for a new flavor twist.
  • For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
