1 medium onion, finely chopped
4 cloves garlic, minced
1/4 cup soy sauce
1/4 cup oyster sauce
2 tablespoons hoisin sauce (optional, for extra richness)
2 tablespoons brown sugar
1/4 cup rice wine or cooking wine
1 cup chicken broth or water
1 teaspoon black pepper
2 bay leaves
1 teaspoon sesame oil (optional)
Sliced green onions, for garnish
Instructions
Step 1: Prepare the Ribs
Rinse the pork ribs and pat them dry with paper towels.
Season the ribs lightly with salt and pepper.
Step 2: Brown the Ribs
Heat the vegetable oil in a large pot or deep skillet over medium-high heat.
Sear the pork ribs on both sides until golden brown. Remove from the pot and set aside.
Step 3: Sauté the Aromatics
In the same pot, reduce the heat to medium and sauté the onions until softened.
Add the minced garlic and cook until fragrant, about 1 minute.
Step 4: Make the Sauce
Stir in the soy sauce, oyster sauce, hoisin sauce (if using), and brown sugar.
Add the rice wine and chicken broth, stirring to combine.
Step 5: Braise the Ribs
Return the browned ribs to the pot and add the bay leaves.
Cover and simmer over low heat for 1–1.5 hours, or until the ribs are tender and the sauce has thickened. Stir occasionally to prevent sticking.
