Ingredients:
- 1 cup self-raising flour
- 1/2 tsp salt
- 1 cup (250ml) cold soda water or beer
- 1L vegetable oil (for deep frying)
- 1 kg boneless fish fillets, cut in half
Instructions:
Step 1:
In a mixing bowl, combine the self-raising flour and salt. Create a well in the center and gradually pour in the soda water or beer, whisking continuously until you achieve a smooth batter.
Step 2:
Pour the vegetable oil into a deep saucepan or wok and heat over medium heat until it reaches 190°C. You can test the oil’s readiness by dropping in a small piece of bread—it should turn golden brown within 10 seconds.
Step 3:
Dip each fish piece into the batter, ensuring it is fully coated. Carefully place the coated fish into the hot oil and fry in batches for 3-4 minutes until crispy and golden brown. Remove from the oil and place on a plate lined with paper towels to drain excess oil.
Step 4:
Repeat the process with the remaining fish, making sure to reheat the oil between batches if needed. Serve hot with your favorite dipping sauce or side dish. Enjoy!
