Crispy Chicken Schnitzel

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 teaspoons salt (divided)
  • 1 teaspoon ground black pepper
  • 2 large eggs
  • 2 tablespoons milk
  • 2 cups breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cup vegetable oil (for frying)
  • Lemon wedges (for serving)

Instructions:

  1. Flatten the chicken breasts to about 1/4 inch thick by placing them between two sheets of plastic wrap and gently pounding with a meat mallet or rolling pin.
  2. Prepare three separate shallow bowls:
    • Bowl 1: Mix the flour with 1 teaspoon of salt and the black pepper.
    • Bowl 2: Beat the eggs together with the milk.
    • Bowl 3: Combine the breadcrumbs with paprika, garlic powder, and the remaining teaspoon of salt.
  3. Coat each piece of chicken in the flour mixture, shaking off the excess. Then dip it in the egg mixture, followed by the breadcrumb mixture. Press lightly to ensure the crumbs stick well.
  4. Heat the oil in a large frying pan over medium-high heat. When the oil is hot, add the chicken and fry for 3 to 4 minutes per side until golden and fully cooked.
  5. Remove the schnitzels from the pan and place on paper towels to drain any extra oil.
  6. Serve hot with lemon wedges on the side for a zesty touch.
