Creamy Baked Rice Pudding with Cinnamon

 

Ingredients:

4 large eggs

3/4 cup granulated sugar

3 cups milk

1 cup heavy cream

2 teaspoons vanilla extract

1 1/2 teaspoons ground cinnamon

3 cups cooked rice, cooled (perfect for using leftover rice)

1 cup raisins

Instructions:

1. Preheat the oven

Start by preheating your oven to 350°F (175°C). This ensures that the pudding bakes evenly and achieves a perfect creamy texture.

2. Mix the base ingredients

In a large mixing bowl, crack the eggs and whisk them thoroughly. Add the sugar and continue whisking until the mixture becomes smooth and creamy. Slowly pour in the milk and heavy cream, blending everything until fully incorporated. This will form the base of your custard.
